Simple Egg Noodle Pasta

Fresh homemade egg noodles made with just flour, eggs, and salt.

Ingredients

1 cup fine pasta flour or all purpose flour

¾ cup semolina flour

3 eggs

1 egg yolk

½ teaspoon salt

Instructions

Mix the two flours and salt on a clean surface or in a bowl.

Make a well in the flour. Crack eggs into the well and start mixing from the center out with a fork. Once combined enough to switch to hand mixing, knead for 7-10 minutes until very elastic when you push your finger onto the dough.

Cover with plastic wrap and let dough rest for 30 minutes.

Divide dough into four separate pieces, roll out into a long, very thin rectangle. You may use a pasta machine at this point! Or if doing by hand, use a very sharp, floured knife to cut pasta into strips.

Bring a pot of salted water to a hard boil and boil noodles until al dente or longer if desired.

Tips

Well floured noodles will last in the fridge for up to two days.
